Question: I'm looking for a sci-fi book I read when in highschool (in 98) I do not remember the title or the author!

Question : I'm looking for a sci-fi book I read when in highschool (in 98) I do not remember the title or the author!
All I remember is that there was this dragon egg, it hatched, and this chubby, insecure girl (looked down upon by all who looked upon her) found him and they went on a journey. The dragon, I think was named Jasper. He always seemed to help her when in a time of need, therefore she would kiss him on the cheek. (He would constantly say, "Don't do that!") Well, by the third time she kissed him, he turned into a human, and he had emerald eyes or of jade? Well, as they travelled the girl became quite thin, no longer chubby and looked upon as ugly,and Jasper would tell her how beautiful she looked, eventually she fell in love with him but something happened, I don't quite remember. It was such an exciting/romantic story, I would really love to read again! Hope someone can help me and thanks for your time!
